Food Notes: Roasted Potatoes

Alright, my favorite way to eat potatoes is roasted.  Not only because that is pretty much the easiest way to make them but also because I just love a crispy new potato.  I also find it meditative to massage my potatoes with lots of olive oil, salt, pepper, and rosemary.  So, I came across this recipe for Thanksgiving since we are decidedly NOT a mashed potato family and decided to take it for a trial run last weekend. Oh. My. Goodness. These were heavenly.  They require an extra step to par-boil and they take a bit longer than my normal new potatoes but so, so worth it.  Use duckfat in place of butter if you can.  Heavenly.
